Giant Ginger Cookies

Giant Ginger Cookies

1 1/2 c butter
2 c sugar
4 tsp ground ginger
2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp cloves, roughly ground
1/4 tsp salt
2 eggs
1/2 molasses
4 1/2 c flour
2 c crystallized ginger, chopped

Beat together butter and sugar until light and fluffy. Mix in all other ingredients, in the listed order. Roll dough into ping-pong sized balls, roll in sugar, and bake at 350°F for 9-11 minutes.
